Sourdough Discard Muffins
Sourdough discard is abundant at my apartment so I try to make things with it often. These muffins are one of my favorite recipes to make with discard →
Ingredients:
1.5 cups (180g) AP flour
1/2 cup (90g) white sugar - could reduce further if want only a touch of sweetness (I already reduced the sugar here from the first version of this recipe which had 150g sugar)
1 TBSP baking powder
1/2 TSP salt
1/2 TSP cinnamon (omit if using fruit or lemon zest as a mix in)
1 egg
1/3 cup milk (any kind)
1/2 cup oil (I use EVOO or coconut oil)
1/2 cup discard
1 TSP vanilla extract
Turbinado sugar for sprinkling
add ins (optional): choc chips, blueberries, lemon zest or shredded coconut all work
Method:
Preheat oven to 425F.
Combine flour, sugar, salt, baking powder and cinnamon in a bowl, whisking to make sure all clumps are out of the mixture. Combine the remaining ingredients in another bowl and then add into the bowl with the try mixture. If using add ins, fold in desired amount now.
Divide mixture into muffin tin with liners. Top each muffin with Turbinado sugar.
Bake at 425F for 10 minutes, reduce heat to 350 and bake for 5 more minutes.
